Ingredients

  • 1 large yellow onion diced
  • 2 garlic cloves diced
  • thyme
  • rosemary
  • 1 large baked potato skin removed
  • chicken broth
  • 1 can of red beer (everyone seems to use rickards red)
  • 35% whipping cream
  • parmesan cheese grated
  • asiago cheese grated
  • sharp cheddar cheese grated
  • 1 tbsp olive oil
  • optional – chopped jalapeño

Directions

  1. Cook onions and garlic in olive oil until clear (not browned).
  2. Add thyme and rosemary
  3. Add whole baked potato insides to pot along with chicken broth and allow to simmer
  4. In a separate pot cook beer until it reduces. Add cream and 3 cheeses. Simmer on low to medium heat until cheese melts.
  5. Add cooked onion to beer mixture.
