Ingredients
- 1 large yellow onion diced
- 2 garlic cloves diced
- thyme
- rosemary
- 1 large baked potato skin removed
- chicken broth
- 1 can of red beer (everyone seems to use rickards red)
- 35% whipping cream
- parmesan cheese grated
- asiago cheese grated
- sharp cheddar cheese grated
- 1 tbsp olive oil
- optional – chopped jalapeño
Directions
- Cook onions and garlic in olive oil until clear (not browned).
- Add thyme and rosemary
- Add whole baked potato insides to pot along with chicken broth and allow to simmer
- In a separate pot cook beer until it reduces. Add cream and 3 cheeses. Simmer on low to medium heat until cheese melts.
- Add cooked onion to beer mixture.
